This recipe takes about 15 minutes and all you need is a bowl and spoon or even a food processor.
Here's what you need:
Almond Butter 3/4 Cup
Maple Syrup or Honey 1/3 Cup
Gluten Free Rolled Oats 1 1/2 Cups
Flaxseed or Meal 1/8 Cup
Chia Seeds 1/8 Cup
Crushed Walnuts 1/8 Cup
Chocolate Chips 1/3 Cup
Protein Powder 30g (I used Pumpkin Spice - Vanilla or Chocolate would also work)
Unsweetened Coconut 1/3 Cup
Mix all the ingredients into a bowl and stir by hand or mix with a food processor. Roll into small balls - makes approximately 24. Yes, they kind of look like meatballs - but they taste delicious...
Store in the fridge for up to 10 days or in the freezer for up to 6 months. If stored in freezer, allow to defrost for a few minutes.
